6-ounce Florida mullet fillets |

Preparation
In a deep pan, heat 1 inch of oil to 375 degrees F. Whisk together egg and water in a shallow dish. Combine potato flakes, Italian dressing, cayenne pepper and parsley flakes in a separate shallow dish. Dip fillets into egg wash then into potato mixture to coat. Cook the fillets in hot oil for 4-5 minutes, browning on each side. Drain on absorbent paper and serve with lemon slices.
