Florida Seafood Recipe

Poached Mullet

Amount Ingredient
Ingredients  
1/2 cup Florida leek, thinly sliced
1 fresh lemon, thinly sliced
1 teaspoon capers
5 whole dried bay leaves
1/2 cup Florida white wine
  salt to taste
  pepper to taste
4 fresh Florida mullet filets
  fresh Florida parsley for garnish, if desired

Preparation
Fill large frying pan 3/4 full with water and add leek, lemon, capers and bay leaves. Simmer for 10 minutes then add the wine. Salt and pepper the mullet and poach in simmering water for about 5 minutes. Garnish with fresh parsley and lemon.
