Florida Seafood Recipe

Herb Potato Crusted Fried Mullet

Amount Ingredient
Ingredients  
1 Florida egg, beaten
1 tablespoon water
1/4 teaspoon cayenne pepper
1 cup mashed potato flakes
1 envelope (7/10 ounce) dry Italian salad dressing mix
1 tablespoon dried parsley flakes
4 6-ounce Florida mullet fillets
1 cup vegetable oil

Preparation
Combine egg, water, salt and pepper in a shallow dish. Combine potato flakes, Italian dressing and parsley flakes in a separate shallow dish. Dip fillets into egg wash then in potato mixture to coat. In a deep pan, cook the fillets in 1 inch of oil at 375 degrees F on a deep-fat thermometer for 2 to 4 minutes, browning on each side. Drain on absorbent paper.
